1 lb lean ground turkey
1 medium onion, chopped (1/2 cup)
1 box (9 oz)frozen chopped spinach
1 can (4.5 oz) chopped green chiles, undrained
1/2 teaspoon ground cumin
1/2 teaspoon garlic-pepper blend
1/2 cup fat-free sour cream
3/4 cup shredded reduced-fat Colby-Monterey Jack cheese blend (3 oz)
1 can (10 oz) enchilada sauce
8 flour tortillas (8 inch)
1/2 cup Thick 'n Chunky salsa

1. Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 12-inch nonstick skillet, cook turkey and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until turkey is no longer pink.

2. Stir in spinach; cook, stirring frequently, until thawed. Stir in green chiles, cumin, garlic-pepper blend, sour cream and 1/4 cup of the cheese.

3. Spread about 1 teaspoon enchilada sauce on each tortilla. Top each with about 1/2 cup turkey mixture. Roll up tortillas; place seam sides down in baking dish. In small bowl, mix remaining enchilada sauce and the salsa; spoon over enchiladas. Sprinkle with remaining 1/2 cup cheese.

4. Spray sheet of foil with cooking spray; cover baking dish with foil, sprayed side down. Bake 40 to 45 minutes or until thoroughly heated.

MSNBC host Rachel Maddow tore into the fact-checking website PolitiFact on Wednesday for confirming that President Barack Obama’s job numbers were correct, but rating his comments only “half true.”

During the State of the Union address on Tuesday night, Obama stated: “In the last 22 months, businesses have created more than 3 million jobs. Last year, they created the most jobs since 2005.”

PolitiFact confirmed that both statistics were correct, only to rate Obama’s statement as “half true” on their Truth-O-Meter. The site said the statement was only half true because “he implicitly credited his administration.”

“PoiltiFact, what is wrong with you?” Maddow said. “You think the president calls himself ‘businesses?’ Like it is a nickname for himself?”

PolitiFact later revised its Truth-O-Meter rating to “Mostly True.”

“Mostly true? PolitiFact, you are fired,” Maddow said. “You are a mess. You are fired. You are undermining the definition of the word ‘fact’ in the English language by pretending to it in your name.”

Caramelized Pork and Sweet Potatoes

Ingredients

* vegetable cooking spray
* 2 medium sweet potatoes, scrubbed and thinly sliced
* 2 tablespoons olive oil
* 2 tablespoons fresh rosemary leaves, chopped
* 2 pork tenderloins, halved (1 1/2 to 2 pounds total), 4 skinless, boneless chicken-breast halves, or 1 1/2 pounds salmon fillet (4 pieces)
* 1/2 teaspoon kosher salt
* freshly ground black pepper
* 2 tablespoons Dijon mustard
* 3 tablespoons sugar
* juice from 1 orange

Directions

1. Heat oven to 450º F. Lightly coat 2 baking pans with cooking spray. In a bowl, toss the sweet potato slices with oil.

2. Arrange potatoes in a single layer on one baking pan. Sprinkle with half the rosemary. Place in the oven and roast until tender, about 30 minutes.

3. Meanwhile, season each side of the meat or salmon with salt and a few grinds of pepper. Spread with mustard. Sprinkle with sugar and remaining rosemary.

4. Arrange the meat or fish on the second baking pan. Roast, turning once, until cooked through, 20 minutes for pork or chicken, 10 minutes for salmon.

5. Check the potatoes for tenderness; cook longer if necessary. Arrange on 4 plates and top with the meat or fish. Cover to keep warm.

6. Place the baking pan used for the meat or fish over medium heat on the stovetop. Add the orange juice and cook until slightly thickened, about 2 minutes. Pour the juice over meat or fish. Season with salt and pepper to taste.

But the recent focus on Romney's tenure as head of the private equity firm Bain capital — a position which went a long way towards making Romney the approximately $190 to $250 million he's now worth — has created something of a rift in the Republican Party over the merits of free market capitalism, and turned the the GOP presidential field into the equivalent of a circular firing squad.

Smothered Pork Chops

1 cup uncooked regular long-grain white rice
1 tablespoon olive oil
2 cloves garlic, finely chopped
6 bone-in pork loin chops, 3/4-inch thick (about 2 lb)
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 can (18.5 oz) French onion soup
2 tablespoons cornstarch

1. Make rice as directed on package.

2. Meanwhile, in 10-inch skillet, heat oil over medium-high heat until hot. Cook garlic and pork chops in oil 4 to 5 minutes on each side or until pork chops are brown. Sprinkle with salt and pepper.

3. In small bowl, mix soup and cornstarch. Pour over pork chops; heat to boiling. Reduce heat to medium, cover and cook 10 to 15 minutes or until pork is no longer pink and meat thermometer inserted in center reads 160°F.

* Heat the soups, water, curry powder, potatoes, vegetables and pepper in a 4-quart saucepan over medium-high heat to a boil.

* Reduce the heat to low. Cover and cook for 10 minutes or until the vegetables are tender. Stir in the chicken. Cook until the mixture is hot and bubbling.

* 4 bone-in pork rib chops (about 1 inch thick; 2 pounds total)
* 1 teaspoon paprika
* kosher salt and black pepper
* 4 scallions, sliced
* 1/4 cup golden raisins
* 1 10-ounce package spinach (about 16 loosely packed cups)
* 1 tablespoon fresh lemon juice

Directions

1. Heat oven to 400° F. Heat the oil in a large skillet over medium-high heat.

2. Season the chops with the paprika, ½ teaspoon salt, and ¼ teaspoon pepper and cook until browned, 2 to 3 minutes per side.

3. Transfer the chops to a rimmed baking sheet and roast in the oven until cooked through, 10 to 12 minutes.

4. Meanwhile, return the skillet to medium heat. Add the scallions and raisins and cook, stirring, for 30 seconds.

5. Add the spinach and ¼ teaspoon each salt and pepper. Cook, tossing, until just wilted, 1 to 2 minutes. Stir in the lemon juice. Serve with the chops.

When a company falls on difficult times, one of the things that seems to
happen is they reduce their staff and workers. The remaining workers
need to find ways to continue to do a good job or risk that their job
would be eliminated as well. Wall street, and the media normally
congratulate the CEO for making this type of "tough decision", and his
board of directors gives him a big bonus.

Our government should not be immune from similar risks.
Therefore: Reduce the House of Representatives from the current 435
members to 218 members and Senate members from 100 to 50(one per State).
Also reduce remaining staff by 25%.

Accomplish this over the next 8 years. (two steps / two elections) and
of course this would require some redistricting.

Some Yearly Monetary Gains Include:
$44,108,400 for elimination of base pay for congress. (267 members X
$165,200 pay / member / yr.)
$97,175,000 for elimination of the above people's staff. (estimate $1.3
Million in staff per each member of the House, and $3 Million in staff
per each member of the Senate every year)
$240,294 for the reduction in remaining staff by 25%.
$7,500,000,000 reduction in pork barrel ear-marks each year. (those
members whose jobs are gone. Current estimates for total government pork
earmarks are at$15 Billion / yr)

The remaining representatives would need to work smarter and would need
to improve efficiencies. It might even be in their best interests to
work together for the good of our country?

We may also expect that smaller committees might lead to a more
efficient resolution of issues as well. It might even be easier to keep
track of what your representative is doing.

Congress has more tools available to do their jobs than it had back in
1911 when the current number of representatives was established.
(telephone, computers, cell phones to name a few)

Note:
Congress did not hesitate to head home when it was a holiday, when the
nation needed a real fix to the economic problems. Also, we have 3
senators that have not been doing their jobs for the past 18+ months (on
the campaign trail) and still they all have been accepting full pay.
These facts alone support a reduction in senators & congress.

Summary of opportunity:
$44,108,400 reduction of congress members.
$282,100, 000 for elimination of the reduced house member staff.
$150,000,000 for elimination of reduced senate member staff.
$59,675,000 for 25% reduction of staff for remaining house members.
$37,500,000 for 25% reduction of staff for remaining senate members.
$7,500,000,000 reduction in pork added to bills by the reduction of
congress members.
$8,073,383,400 per year, estimated total savings. (that's 8-BILLION just
to start!)

Big business does these types of cuts all the time.
If Congresspersons were required to serve 20, 25 or 30 years (like
everyone else) in order to collect retirement benefits there is no
telling how much we would save.Now they get full retirement after
serving only ONE term.
