Catalina Chicken Breasts

2 cups vegetable oil
6 small boneless. skinless chicken breast halves (about 1-1/2 lb.)
1/2 cup Cataline Dressing
1/2 cup apricot jam
1/2 pkg dry onion soup mix (about 3 Tbsp)

Preheat oven to 350.
Heat oil in large skillet on medium-high heat.
Add chicken; cook 4 min. on each side or until browned.
Remove chicken from skillet; place in a 3qt baking dish.

Mix dressing, jam and soup mix in small bowl.
Pour over chicken.

Bake 45 min or until chicken is cooked through.

Makes 6 servings.

I usually serve with brown rice and a tossed green salad.

I decided to cook the Catalina Chicken Breasts. They were great. Being a widower, I used 10 breasts and doubled everything else as I'll take what I didn't eat to the foffice to share with some other folks.
I know I'll be cooking them again in the future. It will be one of my show off meals.
