Holiday Cheeseball

Someone brought this into my office last week and I thought it was the bomb! You can add more or less horseradish to suit your tastes. I am going to make it for Christmas and NY Eve.

Ingredients:

2- 8 ounce packages cream cheese
2- 2 ounce packages Carl Budding dried beef
1 small onion-finely diced
Oak Lake Farms Pure Horseradish-5 1/2 ounce jar (only use about 1/2 of jar)
1 1/2 cups finely diced walnuts


Allow cream cheese to warm to room temperature for about an hour (helps to cream easier). Cream cheese. Cut dried beef into about 1/4" squares. Add dried beef and finely diced onion to creamed cheese. BEFORE adding horseradish to the mixture, DRAIN juices from the horseradish so cheeseball will not be too runny. Add horseradish to taste (usually use about 1/2 of the 5 1/2 ounce jar) to the creamed cheese, dried beef and onion mixture. Form mixture into ball and chill. When firm, roll cheese ball into diced walnuts to completely cover. Serve with your choice of crackers. Tip; we use Philadelphia brand cream cheese and the dried beef and horseradish brands as in recipe for best results.
