Better Basting

This simple recipe adds a big punch of flavor to chicken, seafood, meats, or vegetables. Brush it on as the food grills and use just enough for a light coating (too much will cause flare-ups).

Cook 1 stick salted butter, 3 minced cloves garlic, and 1/2 tsp fresh ground pepper over medium heat until fragrant, 2 minutes. Stir in 2 Tbs. lemon juice, then add one of these flavor boosters: 1/2 cup chopped cilantro, 2 Tbs. chopped rosemary, 1 Tbs. chopped toasted almonds, 1/2 tsp. lemon zest, 1 tsp. red pepper flakes, or 1-1/2 tsp. hot paprika.

Makes 1/2 cup.
