Cranberry Pineapple Salad

Fresh cranberries and sweet pineapple come together in a delightful and unique fruit salad. This is a great side salad for a summer party, but it pairs well with any meal.

Serves: 12
Ingredients

* 5 packages fresh cranberries
* 3 20-ounce cans chunk pineapple with juice
* 2 cups walnuts
* Sugar, to taste (approximately 1-2 cups)

Instructions

1. In a blender or food processor, cut cranberries into coarse pieces. Process pineapple and walnuts into coarse pieces as well.

2. Mix fruit, pineapple juice and nuts into a bowl. Stir in 1 cup sugar and gradually add more to taste.

Notes

You need less sugar if you are letting the salad sit for a while to chill and more if you are serving within several hours.
