Chocolate Cherry Cake

Chocolate cherry cake is the ideal Valentine's Day treat. The bright red cherries make this a great dessert to fit with the holiday's traditional color scheme, and it's just as delicious as it sounds.

Serves: 16
Ingredients

* 2 cups all-purpose flour
* 3/4 cup sugar
* 3/4 cup vegetable oil
* 2 eggs
* 2 teaspoons vanilla extract
* 1 teaspoon baking soda
* 1 teaspoon ground cinnamon
* 1/8 teaspoon salt
* 21 ounces can cherry pie filling
* 6 ounces semisweet chocolate chips
* 1 cup chopped nuts
* Confectioners sugar

Instructions

1. Preheat the oven to 350 degrees F.

2. Butter and flour a bundt pan or 10-inch tube pan. In a bowl. Combine the flour, sugar, oil, eggs, vanilla, baking soda, cinnamon and salt. Mix well. Stir in the cherries and their liquid the chocolate chips and nuts.

3. Pour the batter into the prepared pan and bake for about 1 hour, until a cake tester inserted in the center comes out clean. Cool on rack and remove from the pan to cool completely.

4. To serve, sprinkle with confectioners sugar, if desired.
