Wicked Whoopie Pie

This is one Wicked Whoopie Pie! You won't be able stop eating whoopie pies; this dessert recipe makes you want to come back for more and more every time. Good luck resisting.

Ingredients

* 1/2 cup shortening
* 1 cup sugar
* 1 egg, beaten
* 1 egg yolk
* 1 teaspoon soda
* 1/2 cup hot water
* 1/2 cup buttermilk
* 2 1/4 cups flour
* 1/2 cup cocoa
* 1/2 teaspoon soda
* 1/4 teaspoon salt
* 1 egg white, room temperature
* 2 1/2 cups sifted powdered sugar
* 1/2 cup shortening
* 2 tablespoons flour
* 1 tablespoon milk
* 1 teaspoon vanilla

Instructions

1. Preheat oven to 400 degrees F.

2. Cream shortening; add sugar gradually, beating at medium speed.

3. Add egg and egg yolk and beat well. Dissolve the 1 teaspoon of soda in the hot water and add this to the buttermilk.

4. Combine the flour, cocoa, 1/2 teaspoon of soda and salt.

5. Add the flour mixture and buttermilk mixture to the creamed mixture alternately, starting and ending with the flour mixture. Mix until moistened through.

6. Drop by rounded teaspoons (spread around a little) onto a lightly greased cookie sheet. Bake at 400 degrees F for 8 minutes. Remove to racks to cool.

7. Beat egg white until stiff peaks form. Add rest of ingredients and beat on medium speed until well blended.

8. Spread flat side of cookie with filling and top with another cookie, flat side against filling.
