Easy Overnight Coffee Cake

Make life easy and fix up some of this Easy Overnight Coffee Cake the day before. Then just plop it in the oven in the morning and enjoy a wonderful addition to any breakfast or brunch. Truly one of the best coffee cake recipes.

Cooking Time: 45 min

Ingredients

* 3/4 cup margarine, softened
* 1 cup sugar
* 2 eggs
* 1 cup sour cream
* 2 cups all-purpose flour
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1 teaspoon nutmeg
* 3/4 cup light brown sugar
* 1/2 cup chopped pecans
* 1 teaspoon cinnamon

Instructions

1. Cream margarine and sugar until light and fluffy. Add eggs and sour cream; mix well.

2. Combine flour, baking powder, soda, salt and nutmeg; add to batter and mix well. Pour batter into greased and floured baking pan.

3. Combine brown sugar, pecans and cinnamon; mix well. Sprinkle one half of this mixture over cake batter; swirl mixture through batter.

4. Top remaining 1/2 mixture evenly over cake batter. Cover and chill overnight.

5. When ready to serve, preheat oven to 350 degrees F.

6. Uncover casserole and and bake for 35-45 minutes or until cakes tests done with toothpick.

7. Note: Sliced almonds also work great in place of pecans.
