Jambalaya

This is so easy and is in my crock pot today!  With some corn bread, will make a nice dinner as well as lunches through the week.

1lb skinless, boneless chicken breast, cut into 1" cubes
1lb smoked sausage, cut into 1/2" slices
1lb diced fresh tomatoes
3 celery sticks, chopped
1 small onion, chopped
1 green bell pepper, seeded and chopped
1/2 cup less sodium soy sauce
1 tablespoon Creole seasoning
4 bay leaves
1lb frozen cooked, peeled shrimp, thawed
3 cups cooked rice

In slow cooker, combine chicken, sausage, tomatoes, celery, onion green pepper, soy sauce, Creole seasoning and bay leaves. Cover and cook on LOW for 7 hours. Stir in shrimp and rice, cook until heated through.

I do not like sea food so I cut up a pork chop and threw it in at the start instead of the shrimp.
