Chicken Breasts with Strawberry Sauce

1 Tbsp Olive Oil
2 tsp garlic, minced
2 tsp dried tarragon
4 4oz boneless, skinless chicken breasts
Salt and freshly ground pepper to taste
1 cup fresh strawberries, stemmed and halved
1 tsp Dijon mustard
2 Tbsp Strawberry Preserves
2 tbsp balsamic vinegar

Heat oil, garlic and tarragon in large non-stick skillet over medium heat. Add chicken breast, lightly seasoned with salt and pepper and saute' for 18-20 minutes turning frequently. While chicken is cooking, blend strawberries, mustard, preserves and vinegar in a food processor until smooth. Transfer cooked chicken to a serving platter and pour strawberry sauce evenly over each breast and serve.
