Mixed Berry & Ricotta Parfaits

2 cups ricotta cheese
4 oz cream cheese
4 tbsp sugar, divided
1 tsp vanilla extract
3 tbsp honey
3 cups mixed fresh berries (blackberries, bluberries, rasberries, and stemmed and halved strawberries)
1/4 cup fresh mint leaves chopped
2 tsp lemon juice

Blend ricotta, cream cheese, 2 tbsp sugar, vanilla and honey in food processor until very smooth. Transfer mixture to medium sized bowl. Cover and refrigerate for about 2 hours or until cheese mixture is slightly set. While cheese mixture is setting combine berries, mint, lemon juice and remaining 2 tbs of sugar together in medium sized bowl and let stand for 20 minutes at room temperature. Divide blended cheese mixture evenly in the bottom of 6 parfait glasses. Top each with 1/2 cup of berry mixture and serve.

To reduce fat and calories, light ricotta cheese and light cream cheese may be substituted in this recipe.
