Texas Taco Platter

A long time friend of mine, recently emailed me for this recipe I hadn't cooked or thought of in years. Since I had to hunt for it, thought I'd share it.

2 lbs ground beef
1 large onion, chopped
1 can (14-1/2 ounces) tomatoes w/Liquid, cut up
1 can (12 ounces) tomato paste
1 can (15 ounces) tomato puree
2 tablespoons chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic powder
2 teaspoons salt
1 can (28 ounces) ranch style beans, undrained
1 pkg (10-1/2 ounces) corn style chips
2 cups hot cooked rice

Toppings:
2 cups (8 ounces) shredded cheddar cheese
1 medium onion, chopped
1 head iceberg lettuce, shredded
3 medium tomatoes, chopped
1 can (2-1/4 ounces) sliced ripe olives, drained
1 cup picante sauce, optional

In large skillet or Dutch oven, brown beef and onion; drain. Add next seven ingredients; simmer for 1-1/2 to 2 hours. Add beans and heat through. On a platter, layer the corn chips, rice, meat mixture, cheese, onion, lettuce, tomatoes and olives. Serve with picante sauce if desired. (I also served with sour cream). Yield: 10-12 servings.

Speaking of "Texas Tacos," I'll be so glad when that idiot finally leaves the White House...

(No one will get this reference, but I used to live in Japan, and "tako" is a Japanese slang word for idiot.)
