Strawberries

How to choose strawberries: Go for plump, firm, fragrant berries that are shiny and bright red. Avoid anything that is bruised, looks withered or has a dry or brownish cap. In general, smaller varieties are more flavorful that larger types. Inspect plastic containers and cartons for stickiness or stains, signs that the fruit inside is damaged or past its prime.

How to store: Pick through the berries and discard damaged or moldy ones. Wrap the container of remaining unwashed berries loosely in a plastic bag or paper towel and store in the refrigerator.

Shelf Life: Strawberries are highly perishable. They are at their prime when freshly picked but may keep in the refrigerator for up to 3 days.

Best Uses: Wash and trim the caps just before using. Strawberries can be cooked in jams and pies, but they're best raw, served at room temperature. eat them topped with freshly whipped cream. Or sprinkle them with sugar and balsamic vinegar and serve with sliced pound cake.
