I didn't tap trees this year, in fact, it's been quite a few years since I've tapped my own. But I know many people who go to sugar bush each year. I was told that in this area, Minnesota and Northern Wisconsin, the flow was sporadic and weak earlier on. Everyone thought the sugar would be nothing this year, but then a long period of cold freezing nights followed by days with sunshine and temps into the 50's, allowed the sap to flow and the harvest was a good one.
Nothing like real maple syrup on buttermilk pancakes, or better yet, buckwheat cakes with fresh blueberries.
