Directions
1. Bake 8 slices prosciutto on a baking sheet at 400º F until crisp, 8 to 10 minutes.
2. Season 4 chicken cutlets with salt and pepper. Cook in olive oil over medium-high heat until golden.
3. Form sandwiches with rolls, mayonnaise, olive tapenade, arugula, sliced tomato, the chicken, and the prosciutto.
