1 lb semisweet chocolate, finely chopped
2/3 cup crushed potato chips
1/3 cup crushed pretzels
1/4 cup chopped roasted, salted cashews
1/4 cup chopped roasted, salted pistachios
1.Place 12 ounces of the semisweet chocolate into a heat-safe bowl, reserving the other 4 ounces, and set aside.
2.Pour water into a medium sauce pot, about 1/3 of the way full, and bring to a boil. Turn off the heat and then place the bowl of chocolate on top of the sauce pot. Let it sit for 3-4 minutes.
3.Remove the bowl from the sauce pot and lightly whisk the chocolate until fully melted. Add the reserved 4 ounces of chocolate and whisk until completely melted.
4.Pour the melted chocolate onto a silicone baking mat and with an offset spatula, spread to an even thickness of a 1/8''. Immediately top with the crushed potato chips, pretzels, cashews, and pistachios.
5.Let the bark sit at room temperature until the chocolate hardens completely, then roughly chop into pieces. For more even pieces, cut carefully with a knife.
