Mediterranean Toasted Quinoa Salad

To toast quinoa:

Put 1 teaspoon olive oil in pot on med heat.

Once oil is hot, put in 1 cup of uncooked quinoa and stir for 2-3 min until you hear slight popping and the quinoa has a nutty smell.

Pour 2 cups of water in pot and stir. Lower heat and cover for 20 minutes. Then fluff with fork.

Cut as many of these vegetables as you would like for this salad.

Red onion
Tomatoes
Green bell pepper
Cucumber

In a bowl mix 1/2 cup cooked and cooled quinoa with your vegetables.

Add 1 teaspoons olive oil, a couple splashes of balsamic vinegar, oregano, salt and 15 grams crumbled feta cheese.

Stir all together and enjoy!
